Almond, maple & fig cake
Here's the best fig maple cake recipe you will ever find! We tried this cake at one of Lara's brunches and fell immediately in love with this delicious wet cake.
¼ cup + half 1/4 cup canola oil
3/4 cup happy maple, goût robuste
1,5 teaspoon cider vinegar or lemon juice
3 cups + 1/2 cup almond meal/flour
1 teaspoon baking soda
1/2 teaspoon salt
8 ripe figs sliced in half
Mix dry ingredients (almond meal, baking soda, salt)
Add all wet ingredients (Canola oil, eggs, maple syrup, cider vinegar) and mix well
Grease up a round cake tin and pour the mix into the tin
Add the halved figs on top in the pattern of your choice
Cook in the oven for 50 mins - 1hr at 160 C fan setting
